Our four acre Shiraz block was planted in 1997 and now that the vines are mature and deep rooted, they are remarkably vigourous requiring a lot of work to keep them under control. The results of this work make it worth it as they deliver wonderfully concentrated fruit full of raspberry and pepper with a mineral edge. The vines are spur pruned on VSP trellis.
Our Shiraz block was hand picked in mid-March and the fruit was foot stomped to release the juice from the bunches (this wine is approximately 50% whole bunch) before undergoing fermentation with wild yeasts. The exotic spice aromas during the ferment were incredible! A short post-ferment maceration soaked the tannins from the skins and stalks before pressing off to barrel (300L French oak). A slow, wild malolactic fermentation over the cold winter followed and the wine was then prepared for bottling whilst still vibrant. The wine was bottled without fining or filtration.
Attractive, bright burgundy in colour with good depth. Quite “stoney” at first (iron stone, graphite), the nose comes to life to show lifted raspberry, vanilla and classic cool climate pepper. The palate is soft and generous with a fleshy mid-palate, lively acid, fine mouth coating tannins and an ironstone-like minerality. Dried apricot, coffee and tomato vine can all be seen here. Modern Australian Shiraz inspired by Northern Rhone more than Barossa.
