2017 Tokar Estate Carafe and Tumbler Chardonnay

Our Chardonnay block was established in 2007 by grafting two acres of the gentle North facing Shiraz block (planted 1998) with the Chardonnay clone I10V1. Half is cane pruned, whilst the other is spur pruned. The majority of the wine is from the cane pruned half, having a more open canopy giving the fruit greater exposure to sunlight. This means we can pick the grapes when flavour ripe and while the sugar levels are still low (which equals delicious and with moderate alcohol).

Fruit was hand picked and whole bunches were crushed and pressed with a portion of the juice going straight to barrel and the remainder going to tank for settling. The cloudy juice was then transferred to French oak barrels (20% new and mostly 500L puncheons) to ferment with wild yeasts. Partial malolactic fermentation was encouraged to soften the wine and help build texture. The wine remained in barrel for 6 months before being blended in tank for further ageing on lees before being prepared for bottling.

Sensory Analysis
Super pale gold with brilliant clarity. The nose is lifted with bright lime, blossom, nectarine and fresh baked goods. These flavours continue on the palate, fresh and zippy. Nuts and limes. Yarra Valley Chardonnay should be long and driven and this certainly is that. The lick smacking acidity would see this being a great match with many seafood dishes. I’m thinking a bowl of mussels or some pan fried fish. Delicious now but will unwind and soften with time. I’ll certainly be cellaring a few.
